How We Choose Products

Recommendations are editorial first

Every pan, tool, and ingredient we suggest is chosen because it helps you bake better focaccia — not because of a commission. What matters is the specification that changes the result: an even, light-colored pan that browns the base without burning it; a scale with fine enough resolution to weigh salt and yeast; a thermometer that ends the guesswork on doneness. We say who a tool is not for as readily as who it is for.

Specification-based, not hands-on tested (yet)

Unless a page explicitly says we have tested a specific product, our recommendations are based on published specifications, materials, and how a category behaves in the kitchen — not on hands-on lab testing. We would rather be honest about that than imply testing we have not done. Where we recommend a category (for example, “a light metal 9×13 pan”) we link to a relevant Amazon search rather than a single unreviewed product, so you can choose among good options.

What we never show

We do not display prices, star ratings, review counts, Prime status, availability, discounts, or “best seller” badges. Those change constantly and we have no compliant, approved data source for them, so showing them would be guesswork dressed up as fact. We also avoid calling a product “the best” unless we can back the claim.

Fresh ingredients: buy local

Herbs, tomatoes, cheese, and other perishables are almost always better bought fresh and in season from a local market or deli. Where an Amazon link is genuinely useful (a pantry staple, a spice blend, a specialty jar), we include one; where local is better, we say so and skip the affiliate link.

Recommendations change over time

Exact products may be replaced or reviewed as we learn more, as availability shifts, or as we do hands-on testing. When a recommendation is updated, the reasoning above still holds: merit first, honesty always.
