Recipe Testing

What we mean by “tested”, and exactly how we label recipes that have not been baked yet.

What "tested" means here

A recipe is only called tested once it has been physically baked from the written method — weighing the ingredients as listed, following the stated times and temperatures, and confirming the result. Reading well or looking plausible is not testing.

While testing is pending

Recipes that have not yet been bake-tested carry a clear label: Editorial development version — physical bake testing pending. These are kept out of search until they are tested, as described in our editorial policy.

What we record per test

For each bake we record the exact quantities used, hydration and salt percentages, ambient and dough temperatures where relevant, proof and bake times, the oven and equipment, and honest notes on the outcome and any adjustments. That record is what lets us stand behind a recipe.

Our promise

We will never mark an untested recipe as tested, and we will never invent testing notes, photos, or ratings. Current seed recipes on the site are development versions and are labeled accordingly until they have been baked.
