Focaccia pizza

Six things that make it work

Lower the hydration

Drop from ~80% to ~70% so the base is sturdy enough to carry sauce and cheese without collapsing.

Add sauce raw and thin

A thin layer of crushed tomato added before baking stays bright and cooks on the pizza. Too much sauce is the #1 cause of a soggy center.

Get the pan hot and oiled

A generously oiled metal pan fries the base crisp; a fully preheated oven sets the bottom before the top overcooks.

Time the cheese

Low-moisture mozzarella added before the bake blisters nicely; delicate toppings go on after baking to avoid burning and sogginess.

Bake until the base is firm

Lift a corner — the underside should be deep gold and firm, not pale. Underbaking leaves a gummy middle.

Reheat in the oven

Re-crisp leftovers at 220°C/425°F for 4–6 minutes. The microwave steams the base soft.
