Cause 2: too little water
A dry, low-hydration dough bakes tight because there is not enough water to create steam and open the crumb. If your dough felt firm and easy to knead rather than wet and slack, hydration is holding you back.
Fix: push hydration to 75–85% and weigh your flour so you are not accidentally adding 15% extra by scooping cups. Wetter dough is stickier to handle but rewards you with a dramatically more open crumb.
Cause 3: weak structure or the wrong flour
Gluten is the net that holds the gas. Skipped stretch-and-folds, or a low-protein flour that cannot build a strong network, let the bubbles collapse instead of holding. All-purpose flour used where bread flour was intended is a frequent offender.
