Focaccia Dough Has No Bubbles: Building an Open Crumb

The blistered, bubbly surface of a proofing focaccia and the open holes in the baked crumb are the same thing: pockets of yeast-produced gas trapped in the gluten. A dough with no bubbles has either not made enough gas or not held onto it — so this symptom overlaps closely with dense focaccia.

If the surface stays smooth and slack with no domes or blisters through bulk and proof, work through the same short list of causes.

Give fermentation more time and warmth

Bubbles take time to form. A rushed bulk in a cool kitchen simply will not generate them. Extend the fermentation and warm the environment (an oven with the light on is ideal) until you see the surface start to dome and small bubbles appear beneath the skin.

Weak or old yeast produces gas sluggishly or not at all. If nothing bubbles even after hours in a warm spot, test the yeast in warm sugared water — flat water means dead yeast and a fresh batch is needed.

Hydration and structure hold the gas

A dry dough cannot form big, open bubbles — there is not enough water for steam and expansion. Push hydration toward 78–82% for an airy, blistered crumb, weighing your flour so you do not accidentally stiffen the dough.

The gluten network is what traps the gas. Skipped folds or weak flour let bubbles collapse as fast as they form. Do three or four stretch-and-folds during bulk and use bread flour so the structure can hold a bubbly, open crumb.

Stop degassing it

Sometimes the dough does bubble — and then you flatten it out of existence. Rough handling, pressing the slab flat during transfer, or aggressive dimpling squeezes the gas out and leaves a smooth, dead surface.

Handle the proofed dough as gently as possible. Ease it into the pan, and dimple with soft fingers that create wells without deflating the whole thing. Preserve the bubbles you worked to build — the dimpling should leave the surface studded with little raised, bubbly ridges, not pressed flat.
