Focaccia Dough Is Rising Too Slowly: How to Speed It Up

A rise that is happening but crawling is almost always temperature — with a few fixable exceptions.

A slow but active rise is nearly always a temperature problem: cool room, cold water, or dough that came straight from the fridge. Move the bowl to a warm spot around 24–27°C (an oven with the light on works well) and judge by the dough looking puffy and bubbly, not by the recipe clock.

Slow is not the same as dead

If you can see any change at all — the dough is softer, slightly domed, or showing bubbles — the yeast is alive and you have a speed problem, not a failure. That distinction matters, because the fix for slow dough (add warmth) is completely different from the fix for dead dough (start over).

Recipe timings assume a warm kitchen, usually around 23–25°C. Every few degrees cooler roughly doubles the time, so a "2 hour" rise in a 25°C kitchen can honestly take 4–5 hours at 19°C. Nothing is wrong; the clock in the recipe simply does not match your room.

The temperature ladder

Dough temperature is the master control. It is set by three things: the flour temperature, the water temperature, and the room. Cold flour from an unheated pantry plus cold tap water can start a dough at 16°C, which ferments painfully slowly.

To speed a rise in progress, raise the surrounding temperature: an oven with just the interior light on holds roughly 25–30°C; a microwave with a mug of boiled water traps gentle steam heat; a spot near (never touching) a radiator works too. Aim for warm, not hot — keep the dough below about 35°C so you never approach the range that harms yeast.

When it is not the temperature

Too little yeast: if you scaled a recipe down and rounded the yeast to a smaller pinch than intended, the rise will lag. This is fine — it just takes longer, and often tastes better for it.

Whole-grain or high-protein flour: whole-wheat and very strong bread flours ferment more slowly and absorb more water. Expect longer timings and do not rush them.

A dough straight from cold retard: dough pulled from the fridge is often 4°C and needs an hour or more just to wake up before it will move. Let it come toward room temperature before you expect action.

What not to do

Do not add more yeast to a slow but living dough. You will speed the rise at the cost of a yeasty, one-note flavor and a dough that can suddenly overshoot into over-proofing.

Do not put the bowl somewhere genuinely hot — on top of a running oven, in direct summer sun, or over a hot radiator. Surface temperatures there can climb past 40°C and start killing yeast, turning a slow rise into no rise. Gentle, steady warmth beats a hot blast every time.

Is a slow rise actually bad for focaccia?
Not at all. A longer, cooler ferment develops more flavor and a more open crumb. If you are not in a hurry, a slow rise is a feature, not a fault — many bakers deliberately slow it with an overnight fridge stint.

Yes. If the dough is dragging and you are out of time, cover it and refrigerate it. The rise continues slowly for hours and you can bake the next day. This is the basis of overnight focaccia.
