Focaccia Dough Keeps Springing Back and Will Not Stretch

This is elasticity, and it is normal

Gluten has two competing properties: extensibility (it stretches) and elasticity (it snaps back). Right after mixing or folding, and especially when cold, elasticity dominates — the dough is tense and wants to return to its previous shape the moment you let go. Pushing it toward the pan corners just triggers that recoil.

This is not a fault in your dough. It is the gluten doing exactly what gluten does. The answer is not more strength; it is time. Left to rest, the gluten relaxes, extensibility takes over, and the same dough that fought you becomes soft and easy to coax into every corner.

The rest-and-return technique

When the dough resists, stop. Cover it (in the bowl or already in the oiled pan) and walk away for 15–20 minutes. Come back and it will have surrendered — gently press and it flows outward, holding the stretch instead of pinging back.

For a stubborn dough you can stage it: stretch it as far as it comfortably goes, rest 15 minutes, stretch further, rest again. Two or three gentle rounds fill a pan far better than one aggressive shove, and they protect the gas bubbles you want to keep.

Cold dough is tight dough

If your dough came out of the fridge from an overnight proof, cold is a big part of the tightness. Cold gluten is much more elastic and much less willing to stretch. Let a refrigerated dough sit at room temperature for 45–90 minutes before shaping; it will both warm and relax, and then it spreads with almost no resistance.

Trying to stretch a fridge-cold dough straight away is the most common reason people think their dough "will not fill the pan." It will — it just needs to warm up first.

What forcing it costs you

When you overpower a tense dough, you tear the gluten network and squeeze out the fermentation gas you spent hours building. The result bakes up dense, tight, and uneven, with thin torn patches and thick unfilled corners.

So the mistake to avoid is treating springback as a strength contest. Every time the dough resists, read it as "give me a few more minutes," not "push harder." Patience here is directly visible in the finished crumb.
