The short version

Make an 80% hydration focaccia (500 g flour, 400 g water, 9 g salt, 4 g yeast, olive oil), dimple, then top with about 150 g grated sharp cheddar (some pushed to the pan edges for crisp frico) and sliced jalapeños, and bake at 230°C/450°F for 20–24 minutes.

Why this works

Low-moisture aged cheddar melts and browns without weeping grease, and pushing some to the pan edges gives crisp frico borders. Fresh jalapeño rings placed on top lose their raw sharpness in the oven and turn sweet-hot. Salt in the dough is trimmed slightly because the cheddar is salty.

Method

    Mix

    Whisk flour and yeast. Add water and 20 g oil, then salt. Stir to a wet, shaggy dough with no dry flour.

    Look for: Slack and sticky, pulling off the spoon in sheets.

    Bulk ferment with folds

    Do 3 sets of stretch-and-folds in the first hour, then rise until bubbly and nearly doubled.

    Look for: Domed, blistered surface; airy and jiggly.

    Pan and proof

    Oil the pan well, transfer the dough, coat the top with oil, and proof until it fills the pan.

    Look for: Spreads to the corners and wobbles when nudged.

    Dimple, cheese and chile

    Dimple to the pan bottom. Tuck grated cheddar into the dimples and push a generous ring of cheese right up against the pan edges for a crisp frico border. Lay jalapeño rings over the top.

    Look for: Cheese sits in the oiled wells and along the metal rim; chiles are single-layered so they roast, not steam.

    Bake

    Bake at 230°C/450°F for 20–24 minutes until the cheddar is deep gold and the edge frico is lacy and crisp.

    Look for: Cheese browns and bubbles; jalapeño edges char lightly and the crust pulls from the pan.

    Cool

    Cool in the pan 5 minutes so the frico sets, then lift onto a rack for another 10.

    Look for: The cheesy border firms into a crisp lace instead of a floppy skirt.

Storing & reheating

Storage: Loosely wrapped at room temperature up to 2 days; refrigerate for longer.

Freezing: Freeze cooled pieces wrapped tightly up to 1 month.

Reheating: Re-crisp in a 200°C/400°F oven 5–7 minutes; the microwave makes the cheese rubbery.
